And here comes another golden apricot definitely worth trying. The combination of green lentils and rocket salad is a solid base for the apricot extravagance. And the lime zest & rosemary dressing simply brings the best out of them. And just think the season for golden apricots has only started…
Start with cooking green lentils until soft.
Preheat the oven to 180°C. Slice the apricots around and take out the stones. Mix 3 tbsp olive oil with 2 tbsp freshly squeezed lime juice, add lemon zest and chopped rosemary. Season with pinch of salt and black pepper.
In a bowl, combine the vinaigrette mixture with pitted apricot halves. Place the fruits heads-up on a baking tray covered with baking paper and bake for approx. 25 minutes. The apricots should get crispy, but not too soft.
In a bowl, mix green lentils with baby rocket. Add 1 tbsp olive oil, 1tbsp soya sauce, salt, pepper and chopped garlic.
Serve with apricots on top.
